Herbal Teas
Much of the therapeutic value of herbal teas is in their precious
essential oils that can easily evaporate unless the tea stands covered
in a teapot. Generally, the finer fresh herbs are chopped the more
they will yield their flavour. To gather Lemon Balm on a summer's
day, let it steep in the pot and then sip it whilst reclining in
a shady grove of the garden, is bliss indeed!
For pre-dried cut herbs, pour a cup of boiling water over a heaped
teaspoon of the herb and allow to stand for 5-10 minutes. Some may
prefer to use a little added honey. If so, choose honey the less
heated or treated in any way. It is usually wise to not keep taking
the same herb or mix of herbs past a few days unless under the guidance
of a practitioner. Continued use of one herb may aggravate the very
symptoms you are trying to alleviate.
All our teas are free of caffeine. Their flavours are often subtle
compared to the more well-known Indian teas, yet these teas can
be both refreshing and healing. For maximum enjoyment keep them
stored in glass jars away from the light.
